Ingredients for 8 servings:

  • 300 g bread(s) (dumplings)
  • 250 ml milk
  • 2 eggs
  • 250 g mountain cheese
  • 150 g diced ham
  • 1 onion(s)
  • 1 small bunch of parsley
  • pepper
  • Salt
  • nutmeg
  • Oil, for frying

Dice the onion and sauté it in a pan with the ham. Coarsely grate the mountain cheese. Place the dumpling bread in a bowl, pour the hot milk over it, and let it sit for 10 minutes. Now add the onion and ham mixture, cheese, parsley, and eggs, and season with salt, pepper, and nutmeg. With wet hands, form small dumplings from the mixture and flatten them slightly to create 1 cm thick discs. Heat the oil in a pan and fry the discs over low heat until light brown on both sides. Serve the Kaspressknödel in a clear broth or with sauerkraut. They are also great for freezing and then quickly thawing when needed.
