Ingredients for 4 servings:

  • 1 kg potatoes, cooked
  • 1 onion(s), finely chopped
  • 100 g flour
  • Water, warm
  • ½ tsp salt
  • chives
  • 300 g cheese (Graukas or Tilsiter), grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Grate the potatoes finely and mix with all the other ingredients to form a dough that’s not too soft. Heat the butter in a pan, form flat patties, and fry them until browned on both sides at a moderate temperature. The dumplings are delicious with salads or as a soup garnish. To make a soup, simply boil a clear soup, add 1/2 an onion, a little paprika, and salt. Add the fried dumplings and let them bubble gently. Sprinkle with fresh chives.
