Kasseler – Mousse with spinach salad

Ingredients for 4 servings:

  • 200 g smoked pork cold cuts
  • 2 tbsp cream
  • 100 g cream cheese with herbs
  • 2 tbsp sherry, dry
  • 2 spring onions
  • 80 g fresh leaf spinach
  • 2 tbsp vinegar (sherry vinegar)
  • 3 tbsp oil
  • Paprika powder, hot
  • Nutmeg, freshly grated
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Roughly chop the smoked pork and puree it with the cream in a blender. Stir in the cream cheese and season the mixture with salt, pepper, nutmeg, and paprika. Now add enough sherry to create a creamy mixture. Clean and wash the spring onions, cut the green parts into very fine rings, and fold them into the mousse, then chill the cream. Wash the spinach leaves thoroughly, drain well, and snip off the stalks. Make a marinade with vinegar, oil, salt, and pepper. Cut the white part of the spring onions into very fine rings and toss them in the marinade along with the spinach several times. Use a moistened tablespoon to scoop out dumplings from the smoked pork mousse and serve them with the spinach salad.
