Kefir and yogurt are two dairy products that have health benefits. Both are both made from milk. The use and the ingredients are still quite different.
Kefir and yogurt – the differences
The difference between kefir and yoghurt lies in the production of both foods.
- Yogurt is thicker than kefir. When yoghurt is made, milk is pasteurized by heating it. Added lactic acid bacteria and a temperature of 42 degrees Celsius curdle the milk. In this process, the lactic acid bacteria convert the lactose into lactic acid. This makes the product durable and gives it its characteristic taste.
- To make kefir you need kefir grains. These consist of a protein framework, lactic acid bacteria and yeast. Similar to yoghurt, these ensure that the lactose is converted into lactic acid. The yeast also ensures that alcoholic fermentation takes place in addition to lactic acid fermentation. This creates carbonic acid.
Similarities between dairy products
Both dairy products are healthy. It depends on your preference, which dairy product you prefer and in which combination with other foods you consume kefir or yoghurt.
- Both dairy products contain lactic acid bacteria and have a probiotic effect. They help maintain excellent gut health. A healthy intestinal flora ensures a strong immune system and healthy skin.
- People who suffer from lactose intolerance need not worry. Most types of yoghurt and kefir contain very little lactose because the lactose has been processed into lactic acid by the bacteria. The more acidic the milk product, the less lactose it contains.
- Both yogurt and kefir are low in calories. Both contain valuable nutrients. Both milk products are particularly rich in potassium and calcium as well as vitamins of the B complex. Kefir also contains zinc, phosphorus and other trace elements such as copper, molybdenum, cobalt and iron.
- Kefir also contains vitamin C. This is important for collagen formation. It is also important for proper bone and cartilage development and protection. Vitamin C is important in connection with iron absorption. Iron can only be absorbed by the body with sufficient vitamin C.
- You can lose weight with both kefir and yogurt . It is important that you consume the products in their natural state. As sugar is added, as in pre-made fruit yoghurts, the calorie count goes up and the health aspect loses depending on the amount included.
