Ingredients for 4 servings:

  • 1 small zucchini
  • 600 g minced meat, mixed
  • oil
  • 250 g Edam cheese, grated
  • 250 g mozzarella, grated
  • 250 ml hollandaise sauce
  • 250 g leaf spinach, frozen
  • 400 g mushrooms
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Delicious casserole that largely avoids carbohydrates.

Season the minced meat with salt and pepper and fry in a pan with a little oil until crumbly. Thaw the spinach in a pan. Clean and slice the mushrooms. Slice the zucchini using a cucumber slicer and arrange them on the bottom of the baking dish. Spread the minced meat on top. Spread about half of the Edam cheese on top. Then pour half of the hollandaise sauce over it. Spread the thawed spinach and mushrooms over the top. Sprinkle the remaining Edam cheese on top, top with the mozzarella, and finally pour over the remaining hollandaise sauce. Bake at 180°C (convection oven) for about 25 minutes, or until the cheese is golden brown.
