Ingredients
 

Köfte:

  • 600 g Ground beef
  • 400 g Minced lamb
  • 0,5 piece Onion
  • 2 piece Garlic cloves
  • 3 tbsp Olive oil
  • 1 piece Old Bun
  • 200 ml Milk
  • Salt
  • Pepper
  • 1 pinch Cinammon
  • 1 pinch Cumin
  • 0,5 bunch Fresh smooth parsley
  • 0,5 bunch Fresh coriander

Lamb skewers:

  • 1 kg Lamb shoulder
  • 40 ml Olive oil
  • 40 ml Milk
  • Rosemary
  • Garlic
  • Cumin
  • Salt
  • Pepper
  • 2 tbsp Hot pepper pulp
  • 0,5 piece Onion
  • 250 g Green bacon
  • 20 piece Wooden skewers

Vegetables:

  • 1 piece Zucchini
  • 1 piece Pointed peppers
  • 1 piece Eggplant fresh
  • 1 piece Tomato
  • Salt
  • Pepper
  • Sugar
  • Olive oil

Instructions
 

Köfte

  • Finely chop the vegetable onion and garlic and soak an old roll in milk. Mix the lamb and beef with the onion, garlic, olive oil, finely chopped coriander and parsley, salt, pepper, cumin and the soaked roll. Put in a cool place and let it steep.
  • Form flat meatballs (köfte) out of them and make three grooves lengthways with your fingers.

Lamb skewers

  • Cut the lamb from the shoulder, clean it of tendons etc. and cut into medium-sized pieces. Cut (green) bacon into pieces of the same size.
  • Mix the meat and bacon together with finely chopped onions, olive oil, milk, rosemary, garlic, cumin, salt, pepper and typically Turkish: with paprika paste (mild or / and hot). Mix everything together well. Put the meat in a freezer bag: it can be chilled and marinated in it. Alternate meat and bacon on wooden skewers.

vegetables

  • Cut Mediterranean vegetables such as aubergines, peppers, tomatoes and zucchini into large pieces and marinate with rosemary, garlic, olive oil, salt, pepper and sugar.
  • And off to the grill with the meat and vegetables. Turn the kofte over and over again when grilling. Grill the skewers for a few minutes on each side until the meat is nice and crispy on the outside and tender pink on the inside.
