Ingredients for 6 servings:

  • 6 apples, sour
  • 100 g rice
  • 300 g minced beef
  • 30 g butter
  • 2 onions
  • 1 tsp paprika powder, sweet
  • 1 bunch parsley, chopped
  • 1 bunch coriander greens, chopped
  • 500 g tomatoes
  • Salt
  • pepper

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cook the rice in salted water. Dice the onions and fry in the butter until translucent. Add the minced meat and paprika and continue frying over low heat until the minced meat is crumbly. Cut a lid off the stem of the apples and carefully hollow them out with a teaspoon. The apples should be about one centimeter thick. Cut the cored apple flesh into small cubes and mix well with the minced meat mixture, coriander, and parsley. Season with salt and pepper. Fill the hollowed-out apples with the stuffing. Peel and dice the tomatoes and cook over low heat with a little butter and water until soft. Strain the tomatoes through a sieve and pour the tomato puree over the stuffed apples. Cover and simmer in the oven with a little water at 180 degrees Celsius for about 30 minutes.
