Scampi skewer on lamb's lettuce

Ingredients for 2 servings:

  • 1 bowl of lamb’s lettuce
  • 4 cocktail tomatoes
  • 1 pack of scampi, frozen
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 pinch of pepper
  • 1 tsp, leveled salt
  • 2 basil leaves, chopped
  • 1 small onion(s), diced
  • ½ bunch parsley
  • 2 tbsp sunflower oil
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the lamb’s lettuce and tomatoes, then halve the tomatoes. Peel the onion and dice it into small pieces. Wash and finely chop the basil leaves and parsley. Place the lamb’s lettuce and diced onion in a salad bowl, add the basil and parsley. Season with olive oil, balsamic vinegar, salt, and pepper. Add a pinch of sugar and mix to combine. Thread the scampi onto shish kebab skewers. Heat the sunflower oil in a pan. Fry the scampi until crispy and golden brown. Divide the lamb’s lettuce between two plates, garnish with the halved cocktail tomatoes, and place the warm, fried scampi skewers on top. A delicious starter for any occasion or simply a refreshing snack.
