Ingredients for 4 servings:

  • 500 g Bulgur, fine, (Köftelik Bulgur)
  • 2 tbsp sweet paprika paste (Tatli Biber Salcasi)
  • ½ tube(s) tomato paste
  • 2 pointed peppers, red
  • 2 pointed peppers, green
  • 2 onions or 2 spring onions, cut into fine rings
  • Parsley, chopped
  • Grenadine (pomegranate syrup)
  • oil
  • Salt
  • 1 lemon(s), the juice
  • Pul Biber Aci

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Turkish recipe

Pour enough boiling water over the bulgur in a bowl so that the water rises by 1-2 cm. Let the bulgur swell. In the meantime, finely dice the bell peppers and onions and chop the parsley. Once the bulgur has cooled, add the paprika and tomato paste and mix everything well (preferably with your hands) until everything is evenly red. Then add the bell peppers, onions, and parsley and mix everything well. Then add a little oil and season with lemon juice, pomegranate syrup, salt, and a little pul biber aci. Let it simmer for about 30 minutes.
