Ingredients for 4 servings:

  • 2 cups bulgur
  • 1 pack of tomatoes, pureed
  • 2 tbsp tomato paste
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 2 spring onions
  • 3 large peppers, mild
  • some parsley
  • salt and pepper
  • 3 tsp, heaped sumac
  • 1 lemon(s), juice
  • 2 garlic cloves
  • 250 ml low-fat yogurt
  • 100 g sour cream
  • 1 large romaine lettuce
  • oil

Instructions

Working time approx. 45 minutes; Rest time approx. 15 hours; Cooking/baking time approx. 5 minutes; Total time approx. 15 hours 50 minutes

Bulgur salad

Bring tomatoes, 2 tablespoons of oil, tomato paste, a few squeezes of lemon juice, salt, pepper, and sumac to a boil. Chop the parsley and stir in. Remove the pan from the heat and add the bulgur. Let it stand for 15 minutes. Finely dice the bell peppers, slice the spring onions, and finely slice the chili peppers. Add the vegetables to the bulgur and season to taste. Mix the yogurt with the sour cream, add 1 tablespoon of oil, salt, and pepper, and a few squeezes of lemon juice. Crush the garlic cloves and fold in. Tear off the lettuce leaves and arrange the bulgur on top. Serve the bulgur with the yogurt dip.
