Authentic bulgur salad

Ingredients for 4 servings:

  • 250 g bulgur, fine (wheat groats)
  • 150 ml water
  • 2 onions
  • 2 tbsp ajvar
  • 2 tbsp tomato paste
  • 1 tbsp cumin
  • 1 tbsp paprika powder
  • 1 tbsp pepper
  • 2 tbsp pomegranate syrup
  • n. B. Salt
  • ½ lemon(s), juice
  • ½ bunch parsley, flat
  • 1 bunch of spring onions

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Place the bulgur in a large bowl and pour boiling water over it. Let it simmer for about 10-15 minutes. Don’t use too much water, or it will get too wet! Chop the onions and add them to the pan with the oil, then sauté for about 5 minutes. Add the ajvar and tomato paste and mix everything well. Pour this mixture over the bulgur and stir everything well. Then add the spices. The pomegranate syrup is very important; it gives it the authentic flavor – add it too. Finally, add the finely chopped parsley and spring onions. The stalks of the flat-leaf parsley are very aromatic, so feel free to add them too. The bulgur salad is ready and tastes just like it does in a Turkish store, or even better. You can also chop up more vegetables if you like.
