Kiwi and cucumber salad in orange sauce with tarragon

Ingredients for 2 servings:

  • 2 kiwis
  • 2 mini cucumbers (snack cucumbers)
  • 1 stalk tarragon leaves
  • ½ orange(s), juice
  • 2 tbsp vinegar
  • 1 tbsp oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the kiwi, dice it with the cucumber, and place it in a bowl. Squeeze the orange and drizzle the juice over the salad along with the remaining dressing ingredients. Finally, sprinkle the tarragon leaves on top. Serve fresh.
