Ingredients for 4 servings:

  • 100 g whole grain flakes
  • 75 g raisins
  • 4 kiwis
  • 100 g desiccated coconut
  • 3 tbsp syrup (apple syrup)
  • 1 orange(s)
  • Ginger powder
  • 200 ml water

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

with homemade coconut milk

First, toast 2 tablespoons of desiccated coconut in a non-stick pan without fat until golden brown. Remove and set aside. To make the coconut milk: Place the remaining desiccated coconut in a bowl and pour over 200ml of warm water. Let it swell for about 10-12 minutes. Then press the mixture into a clean kitchen towel and collect the dripping milk. This also works well over a sieve. Squeeze the orange, mix together the juice of the coconut milk, the apple syrup, and about 1/4 teaspoon of ginger powder. Peel and dice the kiwi, cutting 1 kiwi into thin slices. Rinse the raisins in hot water and let them drain. Now mix the whole-grain flakes with the raisins and kiwi cubes and divide them between cereal bowls. Pour the prepared fruit-coconut milk over the mixture, garnish with kiwi slices, and sprinkle with toasted desiccated coconut.
