Ingredients for 4 servings:

  • 60 ml oil, neutral
  • 60 g Parmesan
  • 125 g breadcrumbs
  • Salt
  • 3 egg whites
  • 75 g flour
  • 3 chicken breasts

Working time approx. 20 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 36 minutes

Preheat a deep baking tray with oil to 220°C. Cut the chicken breasts (I use organic chicken) into 3 strips each lengthwise. Put the flour in a bowl and season with salt. Whisk the egg whites in a bowl and season with salt. Mix the Parmesan cheese and breadcrumbs in a bowl. First coat the chicken fillet strips in the flour, then dip them in the beaten egg whites and then coat them in the breadcrumbs. Place the prepared meat strips on the hot baking tray and cook for 8 minutes, then turn them over and cook for another 8 minutes. No additional oil is needed. The meat strips stay juicy, crispy, and delicious. My daycare children love them, but they’re also delicious for adults! Serve with a green salad and (classic) fries.
