Kohlrabi and potato mash

Ingredients for 2 servings:

  • 400 g kohlrabi
  • 400 g potatoes
  • 20 g butter
  • cream
  • Salt and pepper, white
  • nutmeg
  • 1 tbsp, heaped parsley, freshly chopped
  • 1 onion(s), approx. 80 g
  • 1 tbsp margarine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with parsley and roasted onions

Peel the kohlrabi and potatoes and dice them. Place them in a pot of salted water, bring to a boil, and simmer for about 20 minutes. Meanwhile, peel the onion and slice it into rings. Heat the margarine in a pan, add the onion rings, and fry until golden brown. Season with salt and pepper. Drain the kohlrabi and potato cubes, add the butter, and mash with a potato masher. Stir in enough cream until the mash reaches the desired consistency. Fold in the parsley and seasonings. Season to taste. Arrange on plates or in a bowl and serve sprinkled with the roasted onions. Delicious with meatballs, bratwurst, Leberkäse, etc.
