Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 tbsp butter
  • 1 m.-sized onion(s)
  • 200 ml coconut milk or coconut cream
  • 2 tsp soy sauce, light
  • 2 tbsp vegetable broth
  • n. B. nutmeg powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Boil water for the potatoes and then add salt. Meanwhile, peel and chop the potatoes, if desired. When the water boils, add the potatoes and cook until tender. This will take about 10-15 minutes, depending on their size. Peel the onion and cut into half rings. Melt the butter in a saucepan and fry the onions over high heat. Reduce the heat and deglaze with the coconut milk. Add the vegetable stock and soy sauce. Heat this mixture only gently; it should not boil. Drain the potatoes and mash them halfway. You want them to remain in chunks of varying sizes. Mix the potatoes with the onion mixture and serve warm.
