Kohlrabi Cappuccino

Ingredients for 4 servings:

  • 2 m.-large kohlrabi, in pieces
  • 800 ml vegetable stock
  • 200 ml milk
  • nutmeg
  • possibly salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Simmer the kohlrabi pieces in the vegetable stock until very soft, then puree them. Strain everything through a fine sieve so that only the pure kohlrabi broth remains. Simmer on the stove at high heat, season to taste, and add more salt if desired. The broth should have a strong kohlrabi flavor. Then divide the broth between 4 coffee mugs, each about 3/4 full. Heat the milk, whip with a milk frother or hand blender until stiff peaks form, and drizzle over the broth-filled coffee mugs. Grate generously with nutmeg and serve.
