Kohlrabi casserole with mushrooms

Ingredients for 4 servings:

  • 1,000 g kohlrabi
  • 500 g mushrooms
  • 2 onions
  • 2 tbsp oil
  • ½ bunch parsley
  • 150 g crème fraîche
  • 1 egg(s)
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and wash the kohlrabi, quarter it, and pre-cook it in boiling salted water for 10-12 minutes. Drain and slice. Clean the mushrooms with kitchen paper and slice them as well. Peel and dice the onions. Heat the oil and fry the mushrooms and onions for 5 minutes. Season with salt and pepper. Layer the kohlrabi with the mushrooms and onions in a baking dish. Rinse the parsley, pat dry, and chop. Whisk the crème fraîche with the egg and parsley, season with salt and pepper, and pour over the ingredients in the dish. Bake on the middle rack of a preheated oven at 200°C for about 30 minutes.
