Kohlrabi Foam Soup

The perfect kohlrabi foam soup recipe with a picture and simple step-by-step instructions.

  • 1 Pc. Leek
  • 150 g Kohlrabi with green
  • 2 Pc. Shallots
  • 15 g Butter
  • 120 ml White wine
  • 100 ml Vegetable broth
  • 220 ml Milk
  1. Wash the leek and cut into rings
  2. Peel the kohlrabi and cut into small pieces. Cut the “green” of the kohlrabi into fine strips and set aside
  3. Peel and dice shallots
  4. Sauté shallots, leeks and kohlrabi cubes in the butter, deglaze with the white wine, bring to the boil and then simmer for 20 minutes on a low heat with the lid on.
  5. Add the vegetable stock and puree thoroughly with the hand blender
  6. Now add the milk and season with salt and pepper and bring to the boil again briefly.
  7. Finally, stir with a hand blender until frothy.
  8. To serve, sprinkle the kohlrabi green strips on the soup.
