Kohlrabi Foam Soup

Ingredients
 

  • 1 Pc. Leek
  • 150 g Kohlrabi with green
  • 2 Pc. Shallots
  • 15 g Butter
  • 120 ml White wine
  • 100 ml Vegetable broth
  • 220 ml Milk

Instructions
 

  • Wash the leek and cut into rings
  • Peel the kohlrabi and cut into small pieces. Cut the "green" of the kohlrabi into fine strips and set aside
  • Peel and dice shallots
  • Sauté shallots, leeks and kohlrabi cubes in the butter, deglaze with the white wine, bring to the boil and then simmer for 20 minutes on a low heat with the lid on.
  • Add the vegetable stock and puree thoroughly with the hand blender
  • Now add the milk and season with salt and pepper and bring to the boil again briefly.
  • Finally, stir with a hand blender until frothy.
  • To serve, sprinkle the kohlrabi green strips on the soup.
