Kohlrabi salad with carrots, cucumbers and tomatoes

Ingredients for 4 servings:

  • 1 kohlrabi
  • 2 large carrots
  • 1 cucumber(s)
  • 2 tomatoes, firm
  • 2 tbsp parsley or cress, chopped
  • 2 clove(s) garlic, crushed
  • ½ tsp thyme
  • 3 tbsp safflower oil
  • 2 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the kohlrabi and carrots, dice the cucumber, slice the tomato, and mix loosely with the chopped parsley. Mix the remaining ingredients into a marinade, season to taste, and pour over the vegetables.
