Kohlrabi-Thyme Soup

Ingredients for 4 servings:

  • 4 m.-large kohlrabi
  • 1 bunch of spring onions
  • 3 tbsp herb butter
  • Salt and pepper, from the mill
  • Nutmeg, freshly grated
  • 500 ml beef stock
  • ¼ bunch thyme
  • 200 ml cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean, peel, wash, and slice the kohlrabi into strips. Clean, wash, and slice the spring onions into rings. Heat the butter in a saucepan and sauté the kohlrabi strips with the spring onions. Season with salt, pepper, and nutmeg. Pour in the beef stock and let it simmer for about 10 minutes over low heat. Wash, dry, and finely chop the thyme. Stir the cream into the soup and puree everything with a hand blender. Serve garnished with thyme.
