Kohlrabi with bacon vinaigrette

Ingredients for 4 servings:

  • 4 m.-large kohlrabi
  • 150 g bacon or ham, diced
  • 1 spring onion(s) (bunch of onions), cut into fine rings
  • ½ bunch chives, cut into fine rolls
  • 2 tbsp pine nuts, roasted without fat
  • 2 eggs, hard-boiled, chopped
  • 6 radishes, cut into sticks
  • 3 tbsp balsamic vinegar bianco or white wine vinegar
  • 3 tbsp rapeseed oil
  • 4 tbsp vegetable broth
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the kohlrabi and cut into slices approximately 5–6 mm thick. Steam until just tender. Fry the bacon cubes in a frying pan. Combine the vinegar, oil, and broth and season. Mix the bacon and spring onion rings into the sauce. Place the kohlrabi slices on plates, drizzle with the vinaigrette, and garnish with egg, pine nuts, chives, and radishes.
