Ingredients for 4 servings:
- 300 g rice
- 250 g ground beef, lean
- 3 carrots
- 2 peppers
- 200 g shiitake mushroom(s)
- ½ bunch of spring onions
- 1 bunch of coriander
- ½ cucumber(s)
- ½ jar bean sprouts (soybean seedlings)
- 1 tbsp rice vinegar
- 2 tbsp fish sauce
- 2 tsp sesame oil
- 1 chili pepper(s)
- 1 piece(s) ginger root, thumb-sized
- 2 garlic cloves
- 1 tbsp sesame seeds
- salt and pepper
- 1 tbsp vegetable oil
- 4 eggs
- 2 chili peppers
- 1 piece(s) ginger root, thumb-sized

- 1 tbsp curry paste
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp fish sauce
- 2 tsp honey
- 3 tbsp ketchup
- 1 tbsp sesame seeds
- salt and pepper
- 1 can sauerkraut
- 1 chili pepper(s)
- 1 tsp chili paste
- 2 garlic cloves
- 1 tsp sugar
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp fish sauce
- 1 spring onion(s)
- 1 tbsp sesame seeds
Instructions
Working time approx. 1 hour; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 30 minutes
For the fake kimchi, drain the sauerkraut. Finely chop the chili and garlic and mix all ingredients together. Let it sit in the refrigerator for a few hours. For the bibimbap, wash the vegetables. Finely slice the carrots, bell peppers, mushrooms, and cucumber. Finely chop the garlic, ginger, chili, cilantro, and spring onions. Make a vinaigrette with rice vinegar, fish sauce, sesame oil, ginger, chili, garlic, salt, pepper, two-thirds of the cilantro, and two-thirds of the spring onions. Pour the vinaigrette over the vegetables. Cook the rice according to the package instructions. Season the meat with salt and pepper and fry in the oil until tender. Set both aside and keep warm. Sauté the mushrooms. If you like, you can also lightly sauté the carrots and bell peppers one after the other. For the chili sauce, roughly chop the chili, ginger, and garlic. Blend the ingredients into a paste in a blender. The eggs can be served either fried or raw. To serve, place each vegetable or meat individually on top of the portion of rice. You can also mix the rice and vegetables in the pot, add the raw eggs, and heat for a few minutes. Garnish with sesame seeds, the remaining spring onions, coriander, chili sauce, and fake kimchi.
