Hunter's toast topped with vegan cheese

Ingredients for 1 servings:

  • 2 slices of wholemeal bread
  • 5 mushrooms
  • 3 spring onions
  • 1 shot of oat cream (Oat Cream Cuisine)
  • 1 tbsp margarine
  • 75 ml water
  • 1 ½ tsp flour
  • ½ tsp mustard
  • 2 tbsp nutritional yeast
  • ½ tsp salt
  • salt and pepper
  • Herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the mushrooms, trim some of the stems, and cut into small pieces. Finely slice the spring onions. Sauté both in a little oil and deglaze with a dash of oat cream to create a slightly creamy consistency. Season with salt, pepper, and herbs to taste. For the vegan cheese, melt the margarine in a small saucepan. Whisk in the flour and then deglaze with the water. Stir in the mustard, nutritional yeast, and salt and simmer until the cheese is nice and creamy. Place the mushrooms on the bread and scatter the cheese over the bread. Microwave the bread for 2 minutes until the bread is browned and the cheese is melted.
