Korean-style fried tofu

Ingredients for 2 servings:

  • 1 small carrot(s), finely chopped
  • ½ small onion(s), finely chopped
  • 2 spring onions, with lots of green, finely chopped
  • 400 g tofu, medium soft
  • 2 tbsp soy sauce
  • 3 tbsp water
  • 2 ½ tsp sugar
  • 1 tbsp garlic, chopped
  • 1 tbsp sesame oil, roasted
  • 1 tsp sesame seeds
  • some black pepper, freshly ground
  • some cornstarch
  • some vegetable oil, neutral
  • some salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Mix together the soy sauce, water, sugar, garlic, sesame oil, sesame seeds, and pepper. Add the vegetables to the sauce and let it simmer for a while. Cut the tofu into 1 cm thick slices, season with salt, and coat in cornstarch. Fry the tofu in vegetable oil in a large, hot pan until golden brown on both sides, then drain on kitchen paper. Pour the remaining oil from the pan. Return the pan to the stove and add the vegetable and sauce mixture to the pan, bringing to a boil briefly. Add the tofu and simmer in the sauce on high heat for 3-5 minutes until it thickens. Serve with rice.
