Ingredients for 1 servings:

  • ½ liter of milk
  • 50 g yeast, fresh
  • 2 tsp salt
  • 1 egg(s)
  • 200 ml sugar
  • 200 g butter
  • 900 g flour
  • 1 tbsp cardamom, ground
  • 1 egg yolk
  • 50 ml sugar, coarse (granulated sugar)
  • 30 g butter
  • 1 tbsp cinnamon

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Finnish coffee pastries

Dissolve the yeast in lukewarm milk, mix thoroughly with the egg, salt, cardamom, and flour. Finally, stir in the softened fat and let it rise in a warm place. Roll out the dough thinly on a baking board, brush with butter, and sprinkle with the sugar/cinnamon mixture. Starting at one long edge, roll out the dough and cut into discs. Press the discs together in the middle from the outside so that the inner layers bulge out on both sides. Let the slaps rise again, brush with egg and sprinkle with caster sugar, and bake at 225 degrees Celsius until golden brown (8-10 minutes).
