Ingredients for 4 servings:

  • 320 g pasta (Fleckerl, e.g. tagliatelle)
  • ½ head of white cabbage, approx. 800 g
  • 5 tbsp oil (Alba oil), butter or oil also possible
  • 5 tbsp sugar
  • 2 medium-sized onions, finely chopped
  • 2 tbsp balsamic vinegar
  • 250 ml vegetable broth, clear
  • 1 ½ tbsp, ground caraway seeds
  • e.g. salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 30 minutes

Halve the white cabbage, remove the stalk, and cut into approximately 1 cm wide slices. Chop the slices into 1-2 cm pieces. Cook the noodles/Fleckerl according to the package instructions, then drain. Heat the oil, add the sugar, and let it caramelize. Stir in the onions, fry them, and add the white cabbage and caraway seeds. Roast the white cabbage until well browned; this enhances the flavor. Deglaze with vinegar and stock, season with salt and pepper, and simmer over low heat for at least 30 minutes, or preferably 120-180 minutes. The longer it simmers, the softer and tastier the cabbage will be, and the typical sweet flavor will come through more. Add the drained Fleckerl and let it heat through. Season with salt and pepper before serving.
