Ingredients for 2 servings:
- 300 g carrot(s), cleaned, in pieces
- 1 stalk(s) leek, white part only, sliced
- 1 garlic clove(s), chopped
- 1 tbsp tomato paste
- 400 ml vegetable stock
- 4 cl sherry
- 100 g crème fraîche
- salt and pepper
- Paprika powder
- curry powder
- Ginger powder
- Cumin powder
- Coriander powder
- Parsley, chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Sauté the carrots and leeks in a little fat. Add the garlic and tomato paste. Top up with the stock and simmer for about 15 minutes. Pour in the sherry and stir in the crème fraîche. Season generously with the spices and blend until fluffy. Serve sprinkled with parsley.
