Ingredients for 15 servings:
- 42 g yeast
- 500 g flour
- 100 g sugar
- 100 g butter, liquid (but not hot)
- 250 ml milk
- 1 egg(s)
- 1 pinch of salt
- Jam, for filling
- 2 liters of vegetable oil
- Powdered sugar or
- Sugar, fine for dusting
Instructions
Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours
Put about 200g of flour into a bowl and make a well. Crumble in the yeast, add a little sugar, and a little lukewarm milk. Let the mixture rise. Then add the remaining milk, mix everything together, and cover the pre-dough. Let it rise in a warm place. Then add the remaining flour and the remaining ingredients, knead everything thoroughly with the dough hook of a hand mixer, and let it rise again. Roll out the dough to about the thickness of your thumb, cut out doughnuts with a glass of water, place them on a floured board, and let them rise again in a warm place. Place the doughnuts, bottom side up, in moderately hot oil and cook for about 2-3 minutes on each side. Remove the doughnuts, let them drain on a wire rack, and fill them with jam using a fine piping nozzle. Finally, dust with powdered sugar or caster sugar.
