Ingredients for 1 servings:

  • 500 g flour
  • 160 g powdered sugar
  • 320 g butter
  • 4 egg yolks
  • Lemon(s) – peel, grated
  • jam

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cream the butter until fluffy. Stir in the sugar, egg yolk, and lemon zest. Mix with the flour on a board to form a soft shortcrust pastry. Let it rest in a cool place for about 30 minutes. Cut out any shapes you like and bake at about 180 degrees Celsius until light brown. Combine two biscuits with jam and sprinkle with powdered sugar. They will be very soft.
