Kritharaki salad with minced meat

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • salt and pepper
  • 3 tbsp tomato paste
  • 3 tbsp tomato ketchup
  • 2 tbsp oregano
  • ½ small onion(s)
  • some olive oil
  • 500 g Kritharaki (rice-shaped noodles)
  • 3 bell peppers, colored
  • 3 bags of ready-made salad dressing mix (spicy garden herbs), if necessary.

Working time approx. 15 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 29 minutes

quick thing, easy

Mix the ground beef with salt, pepper, tomato paste, ketchup, oregano, and half a finely chopped onion. Fry the ground beef mixture in a large pan with a little olive oil until crumbly and let cool. Cook the kritharaki (available in any well-stocked supermarket where couscous and bulgur are sold) in salted water for about 14 minutes and drain. Dice the bell peppers very finely (rice-grain size), along with the remaining half an onion, and let them simmer in three bags of Salatfix “Garden Herbs” with a little oil. Tip: It doesn’t have to be ready-made. A homemade vinegar-based herb dressing will also do. Mix the drained kritharaki with the ground beef. Then add the marinated bell pepper cubes. Mix everything together and let it marinate well. The salad tastes delicious, fresh, and is quick to prepare. It’s also a visual eye-catcher thanks to the rice noodles. We also like to eat the salad as a side dish for barbecues, despite the meat content.
