Ingredients for 1 servings:
- 2 eggs, size M
- 30 g soy flour
- Salt
- 1 pinch of baking powder
- 50 ml carbonated mineral water
- 1 tbsp extra virgin olive oil

quick and easy
Combine all ingredients in a deep bowl with a generous pinch of salt and mix thoroughly with a hand blender. Pour the batter into a heated pan and cook over medium heat until golden brown. This takes about 5 minutes. This pancake can be served with berries or savory side dishes. I served it with some tzatziki and tomatoes, garnished with basil.
