Lady Fingers (spoon Bisquits)
The perfect lady fingers (spoon bisquits) recipe with a picture and simple step-by-step instructions.
- 4 Eggs
- 150 g Sugar
- 100 g Flour
- 0,5 tsp Baking powder
- 2 Pck. Vanilla sugar
- Powdered sugar
- Preheat the oven to 200 °. Line 2 trays with baking paper. Prepare piping bags with a large opening.
- Separate the eggs and place each in a larger bowl. First, whip the egg whites half-firm. Then remove 2 tablespoons of the sugar, add and continue beating until the egg whites are so firm that they form “peaks” when you pull out the whisk.
- Then whip the egg yolks with the remaining sugar to a frothy, whitish-creamy mass. First fold in half of the very firm egg whites. Sift in the flour and fold in as well. When the flour is no longer visible, fold in the remaining egg whites and immediately pour the mixture into the piping bag.
- Squirt several strips of the same length onto the baking paper, spaced apart, and slide the tray into the oven on the middle rail. Bake time approx. 10 minutes. They should be golden brown. After taking out, leave to cool on a rack with the baking paper. Mix enough powdered sugar with the vanilla sugar and dust the sponge fingers with it immediately.
