Ingredients for 4 servings:

  • 8 lamb chops (double chops)
  • 50 g clarified butter
  • 1 onion(s), chopped
  • 1 tbsp flour
  • 250 ml meat broth
  • 75 ml Madeira or port wine
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

also works with port wine – quick yet sophisticated

Season the lamb chops with salt and pepper and brown them on both sides in the clarified butter in a deep pan. Sprinkle with the chopped onion and flour, fry gently for 10 minutes, then deglaze with the meat broth. Cover and cook for about 30 minutes. Finally, season with Madeira wine or port. If the sauce isn’t thick enough, remove the chops, let the sauce reduce slightly, and reheat the chops. This is a straightforward recipe, but the flavor of lamb with the sweet wine is delicious!
