Lamb ribs perfect for the grill

Ingredients for 4 servings:

  • 5 tbsp olive oil
  • 1 large lemon(s) or lime, juice
  • 2 medium-sized garlic cloves, finely chopped
  • Salt and pepper, black from the mill
  • 1 tsp oregano, finely chopped
  • 1 kg lamb ribs

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Delicious lamb for a hot summer day. Whisk together the oil, lemon juice, garlic, salt, pepper, and oregano. Brush the ribs evenly with the marinade and refrigerate, tightly covered, for at least two hours. Now either place it on a hot charcoal grill or fry it in a pan with 6-8 tablespoons of olive oil until golden brown and crispy. Serve with a Greek farmer’s salad and fresh bread!
