Ingredients for 4 servings:
- 4 lamb fillets
- salt and pepper
- olive oil
- 150 g sugar snap peas (snow peas)
- 250 g beans (princess beans)
- 250 g asparagus, green (thin stalks)

Lamb fillet on snow peas, green beans and green asparagus
Rub the lamb fillets with a little oil, then season with salt and pepper. Fry the lamb fillets in a grill pan for 2-3 minutes on each side. Keep the lamb fillets warm in a baking dish lined with aluminum foil. Bring a pot of salted water to a boil and blanch the cleaned vegetables for about 2-3 minutes. Drain and rinse with cold water. Heat a wok, add 1 tablespoon of olive oil, and cook the vegetables for about 3 minutes (if desired), stirring occasionally. Divide the vegetables among the plates and top with the lamb fillets. Serve with croquettes or duchess potatoes, or use any other fillet.
