Lamb testicles with coriander

Ingredients for 4 servings:

  • 500 g lamb testicles
  • 1 large onion(s)
  • 4 garlic cloves
  • 2 can/n tomatoes, diced
  • 4 chili peppers, green
  • 1 bunch of parsley
  • 1 bunch of coriander
  • 1 tsp sweet paprika powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 1 tbsp lemon juice
  • olive oil
  • Salt

Skin the testicles and cut into bite-sized pieces. In a pan, sauté the chopped garlic cloves in olive oil. Then add the tomatoes, parsley, finely chopped coriander, paprika, cayenne pepper, and cumin, and simmer for 10 minutes. Sauté the chopped onion and chili in a pan, add the testicles, season with salt, and sauté for 5 minutes. Add the testicle and onion mixture to the tomato sauce, add the lemon juice, and sauté for another 5 minutes. Finally, season with salt, cayenne pepper, and lemon juice, and serve hot. Serve with flatbread and red wine.
