Ingredients for 2 servings:
- 700 g rack of lamb(s) or lamb fillet
- 50 g chopped pistachios
- 50 g butter
- 30 g breadcrumbs
- 1 sprig of thyme
- olive oil
- salt and pepper

quick, easy, super tasty
Preheat the oven to 200°C (top/bottom heat). Combine the pistachios, breadcrumbs, thyme, and butter, and season with salt and pepper. Season the lamb with salt and pepper and sear it on all sides in a pan. Then place it on a baking sheet lined with parchment paper. Spread the pistachio mixture over the lamb. Then place the meat in the preheated oven for 10 minutes. Tips: If you have a meat thermometer, the internal temperature should be 50°C. If your oven has a simmer function, feel free to use it.
