Ingredients for 3 servings:
- 250 g lamb’s lettuce
- 50 g bacon cubes
- 1 roll, from the day before, alternatively a slice of bread
- 1 onion(s)
- Vinegar (Melfor vinegar), with honey
- Olive oil, cold pressed
- 1 pinch of salt
- 1 tbsp salad herbs
- 3 tsp forest honey
- Pepper, from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Thoroughly clean and wash the lamb’s lettuce, then place it in a bowl. Finely dice the onion. Set aside a tablespoon of onion. Mix the remaining onions, salt, salad herbs, honey, vinegar, and oil to make a salad dressing, and season to taste. Then heat the pan, heat the olive oil, and fry the bacon cubes with the remaining onions until crispy. Place on a paper towel to absorb the fat. Cut the bread roll into cubes, add them to the hot olive oil, and brown on all sides, stirring constantly. Now the croutons are ready. Place these on a paper towel to absorb the fat. In the bowl, mix the lamb’s lettuce with the salad dressing and divide into portions. Divide the bacon and croutons among the salad portions, first the bacon, then the croutons.
