Lamb's lettuce with figs, Serrano ham and Manchego

Ingredients for 4 servings:

  • 1 pack of lamb’s lettuce
  • ½ bunch basil
  • 4 figs (depending on size)
  • 4 slices of ham (Serrano)
  • 100 g cheese, Manchego in a piece
  • 2 tbsp pine nuts
  • Mustard (honey mustard)
  • Balsamic vinegar, white
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Toast the pine nuts in a pan without fat, let cool. Wash the lamb’s lettuce, spin dry, and arrange on a platter or four plates. Tear the basil leaves and scatter them on top. Tear the ham into bite-sized pieces, quarter or slice the figs, and arrange both on the salad. Grate the Manchego cheese over the top in very thin slices. Mix together a dressing of honey mustard, balsamic vinegar, and olive oil (a milk frother works very well). Drizzle the dressing over the salad, sprinkle with the pine nuts, and serve immediately. This salad is also perfect for a buffet, but serve the dressing separately.
