Lamb's lettuce with fine balsamic-bacon-pine nut dressing

Ingredients for 4 servings:

  • 1 bag of lamb’s lettuce (optional baby leaf spinach, approx. 150 g)
  • 1 bag of pine nuts, approx. 75 g
  • 125 g bacon cubes
  • 10 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 1 tbsp pumpkin seed oil
  • some balsamic cream
  • 1 dashes Maggi
  • some mustard, medium hot
  • 1 ½ tsp sugar or honey
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Roast the seeds in a dry pan, then fry the bacon and let both cool. Combine the balsamic vinegar with the balsamic cream, medium-hot mustard, Maggi (not necessary if you want to avoid MSG), sugar or honey, salt, and pepper. Finally, add the olive oil and pumpkin seed oil and mix thoroughly. Finally, toss the lamb’s lettuce with the dressing and top with the bacon and pine nuts.
