Lamb's lettuce with ginger dressing

Ingredients for 2 servings:

  • 150 g lamb’s lettuce
  • 100 g sour cream
  • 2 tbsp oil (sunflower oil or other oil with little flavor)
  • 1 ginger (thumb-sized)
  • 1 orange(s)
  • 1 spring onion(s)
  • Salt
  • pepper
  • ½ lemon(s) (or lime)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the lamb’s lettuce, trim off the root ends, and then dry thoroughly (best in a salad spinner). Finely dice the ginger. Wash the spring onions and slice them into thin rings. Peel the orange, removing as much of the white pith as possible. Then cut into wedges and halve each one again. For the dressing, mix the cream with the oil, ginger, lemon juice, salt, and pepper. Plate the salad with the oranges and spring onions, and drizzle with the dressing just before serving. If you’re in a hurry, it’s also delicious without the orange and spring onions. Instead of the lamb’s lettuce, the dressing also tastes great with lettuce.
