Lamb's lettuce with maple syrup dressing

Ingredients for 5 servings:

  • 1 bowl of lamb’s lettuce or arugula
  • 1 package of sheep’s cheese
  • 1 package of mushrooms or mushrooms from the can
  • 1 bowl of cherry tomatoes
  • e.g. pine nuts or sunflower seeds
  • 8 tbsp balsamic vinegar
  • 6 tbsp oil
  • 7 tbsp maple syrup
  • 1 tsp salt
  • 2 tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and chop the mushrooms, fry them in a pan, and let them cool. In the meantime, tear and wash the lamb’s lettuce. Then wash and chop the tomatoes. Cut the feta cheese into small cubes. Place all the ingredients in a salad bowl. Tip: Layer the heavier ingredients like tomatoes, feta cheese, and mushrooms at the bottom, then place the lamb’s lettuce on top. This way, you can leave the salad standing if you don’t need it until the evening. For the dressing, mix together all the remaining ingredients. Just before serving, drizzle the dressing over the salad and finish with the toasted pine nuts or sunflower seeds (if you like).
