Lamb's lettuce with mushrooms

Ingredients for 2 servings:

  • 100 g lamb’s lettuce
  • 100 g mushrooms (oyster mushrooms)
  • 1 spring onion(s)
  • 6 tbsp olive oil
  • some salt and colorful pepper from the mill
  • 1 tsp honey
  • 1 tsp mustard
  • 1 tsp vinegar (white wine vinegar)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and wash the lamb’s lettuce, and drain thoroughly. Clean the king oyster mushrooms and cut into pieces. Also clean, wash, and finely slice the spring onions. Heat 2 tablespoons of olive oil in a non-stick pan and fry the king oyster mushrooms for 3 to 4 minutes on all sides. Add the spring onions and fry briefly. Season with salt and pepper. Mix 4 tablespoons of olive oil with honey, mustard, white wine vinegar, salt, and pepper to make a vinaigrette. Carefully toss the salad with the king oyster mushrooms and the vinaigrette and serve immediately.
