Lamb's lettuce with pear and goat cheese à la Gabi

Ingredients for 2 servings:

  • 100 g lamb’s lettuce
  • some radicchio, cut into strips
  • 2 slices of goat’s cheese (20 g each)
  • 1 small pear(s), approx. 100 g, firm, peeled, pitted, diced
  • 1 tbsp water
  • 1 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • ½ tsp maple syrup
  • 1 tbsp walnut oil
  • 2 tsp walnuts, chopped, roasted without fat
  • Salt and pepper, black, from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Briefly simmer the pear cubes in water and lemon juice in a covered saucepan, then add 1 tablespoon of vinegar. Mix the pear cubes with 1 tablespoon of vinegar, salt, pepper, maple syrup, and walnut oil. Mix with the lamb’s lettuce and radicchio, divide between 2 plates, sprinkle with walnuts, top with cheese, and serve.
