Lamb's lettuce with potato dressing

Ingredients for 3 servings:

  • 300 g lamb’s lettuce
  • 2 potatoes, preferably floury
  • 1 onion(s)
  • 3 tbsp rapeseed oil
  • 2 tbsp lemon juice
  • salt and pepper
  • Paprika powder
  • Dill tips, dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Wash and trim the lamb’s lettuce thoroughly. Cook the potatoes until tender and let them cool slightly. You can also use leftover potatoes from the day before. Mash them with a fork. Mix the mashed potatoes in a bowl with oil, lemon juice, salt, spices, and dill, and season to taste. Finely dice the onion and mix in. Finally, add the lamb’s lettuce and gently toss with the potato dressing.
