Lamb's lettuce with salmon

Ingredients for 2 servings:

  • 50 g lamb’s lettuce
  • 2 carrots
  • 100 g salmon
  • 2 tsp lemon juice
  • 2 tsp pine nuts
  • 2 tbsp oil
  • 2 tbsp vinegar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash and peel the carrots, cut them into small slices, and add them to the washed lamb’s lettuce. Briefly toast the pine nuts in a pan and let them cool. Wash the salmon, pat dry, drizzle with lemon juice, and fry both sides in a pan with oil until golden brown. Mix the oil with the vinegar, salt, and pepper to make a dressing. Place the salmon on the salad, scatter the pine nuts over it, and season with the dressing.
