Oven-baked chicken with vegetables

Ingredients for 4 servings:

  • 4 m.-sized potatoes
  • 4 large carrots
  • 1 large onion(s)
  • 1 chicken or 1 bag of chicken thighs
  • ½ cup water
  • 1 tbsp thyme
  • ½ tbsp black pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes

Preheat the oven to 200°C. Peel and slice the potatoes and carrots, and roughly dice the onion. Place everything in a casserole dish. Carve and skin the chicken, and place it on top of the vegetables. Mix the thyme and pepper with the water and pour over the chicken. Braise in the oven for about 1 hour, until the meat turns golden brown, basting it with the pan juices several times.
