Ingredients for 4 servings:
- 100 g lamb’s lettuce
- ¼ head of frisée lettuce
- 2 stalk(s) spring onions
- 2 pears, ripe
- 200 g smoked pork cold cuts
- 1 tbsp mustard
- 1 tbsp honey
- 4 tbsp vinegar (fruit vinegar)
- 4 tbsp rapeseed oil
- some salt and pepper, black from the mill

Preparation: Trim and wash the spring onions and slice into thin rings. Trim and wash the lettuce, spin dry, and tear into small pieces. Wash the pears, quarter them, remove the cores, and cut into thin wedges. Roll up the smoked pork slices decoratively. For the vinaigrette, whisk together the vinegar, salt, pepper, mustard, and honey. Add the rapeseed oil a few drops at a time, whisking continuously. Stir the prepared spring onions into the vinaigrette. Season the salad with a little salt and freshly ground pepper. Please note that the mustard already adds quite a bit of spice. Mix the two green salads and place them on a platter or in a bowl. Arrange the pear slices and smoked pork rolls decoratively on top and drizzle with the vinaigrette (do not drown them in it). Serve with hearty whole-grain rye bread.
