Lamb's lettuce with sweet potato, bacon and feta cheese

Ingredients for 2 servings:

  • 1 small sweet potato(s)
  • 125 g lamb’s lettuce
  • 75 g sheep’s cheese
  • 100 g bacon, diced
  • 1 onion(s), red
  • 1 tbsp rapeseed oil
  • 2 tbsp fruit vinegar, e.g. raspberry or currant
  • 3 tbsp olive oil
  • 1 garlic clove(s)
  • 1 tsp jam
  • 1 tsp mustard
  • Water
  • salt and pepper
  • 1 tbsp honey

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash and dry the lamb’s lettuce, then divide it between plates. Peel the sweet potato, cut it into small cubes, and simmer gently for a few minutes. Peel the onion and slice it into rings. In a small bowl, combine the cooked sweet potato cubes, bacon, and onions with the tablespoon of honey, then season with salt and pepper. Heat the oil in a pan and fry the mixture until the bacon and sweet potato are lightly browned. Pour the mixture over the lamb’s lettuce and crumble the feta cheese over it. For the dressing: Mix the garlic, fruit vinegar, olive oil, jam, and mustard with a little water. Season with salt and pepper. Then pour it over the salad. Serve with baguette.
